Thanks, Kelsea Ballerini!

As some of your probably know, I have made it my mission to eat healthier. I wish I could say it's been easy, but it sucks like 90% of the time. I'm getting used to it, though, and I've been obsessively searching Pinterest for new healthy recipes to try. I keep seeing this 2-ingredient pancake recipe everywhere, including Kelsea Ballerini's Snapchat story, so last night I finally decided to give it a try.

When you get right down to it, this recipe literally only requires two ingredients: bananas and eggs (different recipes call for a different number of bananas - I just used one). There are other things you can add if you like, but I'll get to those in a minute. Here's what you do:

  1. Take your banana(s) and mash it up nice and good in a bowl
  2. Whisk in two eggs
  3. Cook on a skillet just like a pancake

Since there's no flour to hold the pancake together, they recommend making the pancakes small, and using a thin spatula to flip them.

I'm not a very good cook, but these were actually super duper easy to make. And you can top them with anything you'd put on a pancake! Are they as good as regular pancakes? No. Absolutely not. But, they aren't bad like I assumed they would be. And, they definitely took care of my pancake craving.

If you're feeling extra fancy, there are some additional ingredients you can add to the recipe:

  • Baking powder (for fluffier pancakes)
  • Vanilla
  • Cinnamon
  • Cocoa or protein powder
  • Chopped nuts
  • Chocolate chips
  • Fresh berries
