Normally when I visit a brand new restaurant during lunch hours, it's not crazy busy. That was not the case at The Edison Pub and Eatery! A friend and I stopped by around noon on Friday to try it out, and the place was packed! We quickly found out why.

The Edison, located at 475 Northland Ave. across from Volley's in Cedar Rapids, just opened last week, but it already seems to be a hit! Not only is the food delicious, but the interior looks amazing. You can tell a lot of work was put into the design, right down to the lightbulb-shaped salt and pepper shakers:

Despite how busy the restaurant was while we were there, we were seated quickly (the place is HUGE!) and had good service. We had three different people come over and ask us if we needed anything throughout our meal and they were all very friendly.

Now, let's get to the important stuff... the food! The spinach artichoke dip was recommended to us for an appetizer, so that's what we went with. We loved it!

I debated between a few different options for my meal, but I ended up ordering the Southwest Burger with fries, and both were really good. Plus, the ranch dressing was delicious, which is very important to me as a stereotypical Midwesterner.

The best thing we tried, though, was the baked mac & cheese. My friend and I are a little obsessed with mac & cheese, so we had to give it a try. It ended up being some of the best mac we've ever ordered in Eastern Iowa. And that is nothing a statement I take lightly!

I will definitely be back at The Edison very soon! There are still a bunch of menu items I want to try :)
