Curt Bean was the founder of Mr. Beans' coffee shop in downtown Cedar Rapids and Marion, as well as the former Ruby's Pizza owner in downtown Cedar Rapids.

He sold Ruby's in 2015, and customers were devastated when the new owners closed down in 2018. Bean is back in the pizza business, this time in Northeast Cedar Rapids.

A new restaurant called Bop's Pizza opened recently. It's located at 921 Blairs Ferry Rd. NE, near Target and Natural Grocers. Bean is using original recipes from when he opened Ruby's several years ago, featuring thick-crust Detroit and New York-style pizzas all day, slices from 1-3:30 p.m. Monday-Friday, and personal pizzas for lunch. It's exciting news for fans of the original Ruby's.

He calls it "Bop's", as that us a nickname from his grandson. The dine-in and carryout hours at Bop's, which opened in June, are 11 a.m.-8 p.m. Monday through Thursday, and 11-9 on Friday and Saturday.
