Happy National Grilled Cheese Day!

When it comes to comfort food, one of my all-time favorites would have to be the grilled cheese sandwich. How could it not be? It contains my two favorite foods: bread and cheese!

I've eaten a TON of grilled cheese sandwiches in my life, but just a few weeks ago, I tried one that blew my mind. A friend and I were attending a concert at Xtream Arena in Coralville, and we decided to stop for dinner first. We ended up right across the street from the venue at Tribute Eatery & Bar, a place that neither of us had ever been to before. As soon as I saw the grilled cheese on the menu, I knew I would have to try it.

I'm typically pretty simple when it comes to grilled cheese, but something told me that I should order this one with all the toppings listed. It came with roasted garlic & horseradish boursin, havarti, gruyère, capicola, and red peppers on sourdough bread. From the very first bite, I was in love. This grilled cheese was so freaking good that I've thought about it almost every day since. It has ruined all other grilled cheese sandwiches for me (ok, not really).
