Happy National Grilled Cheese Day!

There's not many things I'm great at cooking, but I feel like I have really perfected the grilled cheese sandwich. I've been making grilled cheese sandwiches since I was like, 11-years-old, but last year I got bored during quarantine and decided to tinker with my recipe a bit. Now I will NEVER go back!

In honor of today's holiday, I've decided to share with you my recipe for four-cheese grilled cheese. It all starts with the bread. I typically go for the fresh sourdough bread from Hy-Vee, but any kind of fresh bread will do! The next step is to butter the bread, but before you drop it down in the pan, sprinkle a little parmesan cheese on there. It's a little messy, but I promise it's worth it.

Once you have your first piece of bread in the pan, take a little goat cheese or cream cheese and spread a layer onto the inside, before you lay the cheese down. Then you have to evenly distribute the sliced cheese across the bread, so you have the proper bread-to-cheese ratio. I like to use one slice of Sargento Pepper Jack and one slice of Kraft American, but you can use whatever your two favorites are.

From there, the final step is to add the other piece of bread to the top with the butter facing up, and, you guessed it, sprinkle some parmesan cheese on that one, too. Then you cook each side until it's golden brown, and you're all done! Super simple, but I've found that the parmesan cooked into the bread and that layer of goat cheese really adds some bonus flavor.
